S'mores Pops - Just in Time for Summer

S'mores remind me of my days when I was a Girl Scout. First I'd find a good long stick, add a nice fat marshmallow to it and toast it over the camp fire. Once it was lightly browned or burnt was even better, I'd quickly put it between two graham crackers with a large square of Hershey's chocolate which would melt instantly. Hmmmm, can you remember how good that tasted?

Well, I have an alternate to the above that not only tastes just as delicious but can be given out as party treats. Here's what you'll need to make them:
S'mores Pops

1 package of Marshmallows (I used the Campfire brand-nice flat bottom)
1-14 oz. bag of Chocolate Wafers
1 box of Graham Cracker Crumbs
1 package of Pop Sticks




  1. Place a pop stick into each marshmallow and set on a tray lined with wax or parchment paper.
  2. Add graham cracker crumbs to a bowl deep enough for dipping.
  3. Place the chocolate wafers in a microwave proof dish and microwave on high for 30 seconds. Take out, stir and return to microwave for another 30 seconds and stir again. Continue one more time if needed until all of the chocolate is melted. I used a Babycakes Chocolatier (which is like a small fondue pot) to keep the melted chocolate at the perfect temperature. 
  4. Dip the marshmallow into the chocolate until completely coated.




4.  Twirl the pop around a couple of times so the chocolate is evenly distributed. 
5.  Dip the bottom of the pop into the cracker crumbs, tap it so it stays, and then twirl the pop in the crumbs until coated on sides.


6.  Place pops on wax lined tray for at least 1/2 hour or until chocolate is set. It will harden nicely and will be crisp when bitten into.



7.  Once hardened, I placed the pops in cellophane treat bags ready to give out as party favors.
