You Can't Beet This Easy Recipe

Love beets? Here's a quick and easy side dish that you can serve for dinner. The goat cheese could be substituted with gorganzola, feta or whatever your favorite is...here goes:

1 Can of Whole Beets
1/2 Sweet Onion like Vidalia
4 oz. of Goat Cheese
Olive Oil - 3 T
Balsamic Vinegar - 1 1/2 T
Salt & Pepper

Thinly slice the beets and onions and toss together. Swirl the olive oil and balsamic over the beet mixture and season with salt and pepper to taste. Crumble the goat cheese and sprinkle over mixture...toss lightly and enjoy! Can be left at room temperature until ready to eat...refrigerate leftovers if any.
