I love eating muffins. There's something about them that makes me feel cozy and relaxed. Nothing like a delicious muffin with a good cup of coffee or hot tea. This recipe yields 12 muffins.
Ingredients:
1-1/2 cups of flour
1/2 cup unsweetened cocoa
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
Pinch of salt
1/2 cup of packed light brown sugar
2 large eggs
1 cup milk
6 T. canola oil
1 cup semi-sweet chocolate chips

Instructions:
- Preheat your oven to 400º
- Grease a 12-cup muffin tin with cooking spray or use cupcake liners.
- Mix the flour, cocoa, baking powder, cinnamon and salt into a large bowl. Stir in the sugar and mix well.
- Beat the eggs in a separate small bowl with a fork and add the milk and oil.
- Make a well in the center of the flour mixture and pour in the liquid mixture. Stir gently until everything is combined; do not overmix.
- Fold in chocolate chips and blend gently.
- Spoon into muffin tin.
- Bake in oven for 15-20 minutes depending on your oven. I baked mine for 17 mins. They will rise nicely and will be slightly firm to the touch when done.
- Cool in the tin for 5 minutes on wire rack.
- Gently lift out and cool completely on rack.
